Let me explain how these Roasted Balsamic Strawberries and Mascarpone Popsicle came to be; It’s a sunny, summery, Sunday morning and I am up earlier than usual. I grab my laptop and start perusing my saved recipes. My eye catches a little ad off to the side on one of the sites I’m looking at, it’s for Popsicle molds. I love Popsicle molds… cause I love Popsicle’s. I don’t give it a second thought and head out to the grocery store. I do my thing and see these strawberries, luscious and red, piled HIGH just screaming for me – oh my they are fabulous – and I grab a few pints knowing I will make something out of it. Then I see Mascarpone Cheese on sale…. well, that never happens… so I grab a few of those, I will figure out what to do with it later…. Fast forward an hour or so and I’m in my kitchen putting away my groceries. Something tumbles out of a bag and hit’s the Balsamic vinegar on my counter. Using my secret Ninja skills I catch the bottle and look at the culprit.. its the Mascarpone cheese… and it looks like it took a strawberry with it on it’s rampage out of the bag. Then it hits me, hard: I need to make some Popsicle’s, like now…
Just for the record, this post could have easy turned into a “why I love online shopping” post and it almost did a few times.

Roasted Balsamic Strawberries with Mascarpone Popsicle
Ingredients
- 280 grams strawberries washed and stemmed
- 1/2 teaspoon sugar
- 2 Tablespoons balsamic vinegar
- 120 grams sugar
- 240 grams water
- 80 grams mascarpone cheese
- 40 mL heavy cream 35% whipping
- 1/8 teaspoon salt
Instructions
- Preheat oven to 350°F
- Line a small roasting dish with parchment paper
- Wash and stem the strawberries, place in a medium bowl
- Sprinkle 1/2 teaspoon sugar onto strawberries and toss
- Add in Balsamic vinegar and toss again
- Turn out onto the prepared roasting dish and roast for 25 minutes
- While strawberries are roasting, in a small saucepan combine sugar and water and cook over medium heat, stirring occasionally, for 5 minutes or until all the sugar dissolves and the liquid is clear (not cloudy) * Do not over cook or mixture will thicken and we don’t want that
- Remove simple sugar mixture from heat and set aside
- Once strawberries are cooked, transfer to a blended along with all the liquid left in the roasting dish, the simple sugar mixture from above, mascarpone cheese, heavy cream and salt
- Pulse to combine and pour out evenly into popsicle molds
- Add popsicle sticks and freeze overnight or until rock solid
