I have always had lure to lobster, I think it comes from culinary school and being told repeatedly that “this stuff is expensive so don’t screw it up!” by my Chef teachers that has made it a personal goal to, well, not screw it up.
With all the recently horrible and cold weather this winter monster has brought us, I find myself longing for summer – the bright colours, light dishes and the sandwiches.
Truth be told – making this recipe was probably just as much for me to remind myself were getting closer to summer with every stinking, cold day as it is for the visual pleasure and drool factor for you.
I think if I stand on my tippie toes – I *might* be able to see the top of summer’s head from here….. (one can only hope after-all)
